Hey, fellow readers! My name is Kristen (pen name Kristen Hogrefe Parnell), and I’m blessed to be the mom of a two-year-old boy. That said, his attention span and my free time rival each other for brevity, but tis the season for baking Christmas cookies. And my son loves “making cookies.” (His version: beating a wooden spoon in a small mixing bowl while I get all the ingredients together.)
Enter the Christmas cake cookie hack. This idea is not
original to me, but it’s a lifesaver this year. With three-to-four other
ingredients along with a box of cake mix, you can have yummy Christmas cookies that
taste like something much more complicated.

So far, I’ve made the Red Velvet ones, and my husband’s appreciation of them did not go unnoticed. (I won’t tell you how fast they disappeared, but it was … fast.)
In case you're not on Pinterest, here's the recipe for the Red Velvet ones I made:
Ingredients:
- 1 box Red Velvet cake mix
- 1/3 cup melted butter
- 2 eggs
- 24 Hershey's kisses
Directions:
- Preheat the oven to 350.
- Combine all ingredients (except for the Hershey's kisses)
- Roll the dough into balls and place on the cookie sheet. (Tip: Put some melted butter on your fingers so the dough doesn't stick to you!)
- Bake for 8-10 minutes.
- Unwrap the Hershey's kisses.
- While the cookies are still hot, press a Hershey's kiss onto each one (or leave some plain too).

This is a beautiful cookie! I’m going to share the recipe with my son and daughter, both of whom make lots of cookies with their kids for Christmas. I don’t bake now that the kids are grown and gone, but my favorites were always snickerdoodles and I used the recipe from my Betty Crocker cookbook. watts.vickie@gmail.com

ReplyDeleteI don't think I have actually made Christmas cookies since I got married. My husband was a teacher and then a youth pastor, so we were gifted WAY too many sweets. We also would travel to our families' houses for the holidays, and they had plenty!

We made Christmas cookies every year as a child. I assume your recipe could be made with any cake mix. I love how easy it is!
